This recipe originated from a Paleo snickerdoodle recipe from Pinterest, but at the very last second I decided to skip the cinnamon coating and throw in some chocolate chips and crushed macadamia nuts just to see what would happen. Well let me tell you, it was meant to be because these are my new favorite cookies! They’re super fluffy like a snickerdoodle, but chocolately and nutty like a traditional chocolate chip cookie. They’re also suuuuuper quick and easy to make and only take about 8 minutes in the oven so if you’re in need of dessert stat, keep this recipe in your notes app (like I do).

INGREDIENTS

2c almond flour 
1/8 tsp sea salt
1/4 tsp baking soda
4 Tbsp melted coconut oil
1 egg
1/4 c honey
1 Tbsp vanilla extract

1 cup Enjoy Life chocolate chunks & crushed macadamia nuts (about half and half)

STEPS
1. Mix ingredients from almond flour to vanilla extract
2. Add chocolate chip/nut mix
3. Roll into heaping Tbsp-sized balls
4. Press to flatten on cookie sheet
5. Bake @ 350°F for about 8min or until the bottom edge starts to brown
